Directions

  1. 1Place chicken, diced tomatoes and chilies in a saucepan.
  2. 2Chop onion and add to pan.
  3. 3Add raw brown rice, seasonings and chicken broth. Cover.
  4. 4Once it boils, lower to a simmer and cook for 20 minutes.
  5. 5Note: cheddar cheese, sour cream or a few tortilla chips can be added for a few extra calories.
