Ingredients
- 3/4 cup diced tomatoesNutrition
- 1/2 tsp chili powderNutrition
- 1 2/3 cup chicken breastNutrition
- 2 cups chicken brothNutrition
- 2 oz brown riceNutrition
- 1 tbsp cuminNutrition
- 1 tbsp garlic powderNutrition
- 1 tbsp onion powderNutrition
- 2 tsps ground oreganoNutrition
- 1 medium onionsNutrition
- 4 oz green chili peppersNutrition
Directions
- 1Place chicken, diced tomatoes and chilies in a saucepan.
- 2Chop onion and add to pan.
- 3Add raw brown rice, seasonings and chicken broth. Cover.
- 4Once it boils, lower to a simmer and cook for 20 minutes.
- 5Note: cheddar cheese, sour cream or a few tortilla chips can be added for a few extra calories.
