Blackbean and Quinoa Salad

Ingredients

Directions

  1. 1Heat the oil in a medium saucepan over medium heat.
  2. 2Stir in the onion and garlic, and saute until lightly browned.
  3. 3Mix quinoa into the saucepan and cover with chicken/vegetable broth.
  4. 4Season with cumin, paprika, cajun seasoning, salt, and pepper. Bring the mixture to a boil.
  5. 5Cover, reduce heat, and simmer 20 minutes.
  6. 6Stir frozen corn into the saucepan, and continue to simmer about 5 minutes until heated through.
  7. 7Mix in the black beans and cilantro.
