Ingredients
- 1/2 cup red wine vinegarNutrition
- 1/2 cup cilantro, choppedNutrition
- 1 medium red bell pepperNutrition
- 1/2 tsp chili powderNutrition
- 15 oz black beansNutrition
- 1 medium red onion, choppedNutrition
- 1/2 tbsp black pepperNutrition
- 1/2 fl oz lemon juiceNutrition
- 1 fl oz lime juiceNutrition
- 1 tsp garlicNutrition
- 1 medium green bell pepper, choppedNutrition
- 15 oz kidney beansNutrition
- 4 oz olive oilNutrition
- 15 oz cannellini beansNutrition
Directions
- 1In a large bowl, combine beans (rinsed and drained), bell peppers and red onion.
- 2In a small bowl, whisk together olive oil, red wine vinegar, lime juice, lemon juice, cilantro, and black pepper.
- 3Season to taste with garlic and chili powder.
- 4Pour olive oil dressing over vegetables; mix well.
- 5Chill thoroughly, and serve cold.
