Mexican Style Soup

A low carb semi-spicy soup topped with grated cheese.

Directions

  1. 1Use the same pot for all ingredients.
  2. 2Dice and brown chicken in pan with olive oil.
  3. 3Take chicken out of pan and set aside.
  4. 4In same pan, put some of the olive oil, the onions, bell peppers and garlic. Stir until soft.
  5. 5Add cumin and chili powder, then add diced tomatoes and green chili's (do not drain juice).
  6. 6Add chicken broth and cilantro and bring to boil.
  7. 7Serve hot topped with shredded cheese. Tortilla chips can be added if desired.
