Mexican Style Soup
A low carb semi-spicy soup topped with grated cheese.

Ingredients
- 2 cups shredded colby jack cheeseNutrition
- 1 tsp chili powderNutrition
- 1 tsp cuminNutrition
- 1 dash pepperNutrition
- 1 dash saltNutrition
- 3 tbsps olive oilNutrition
- 4 breasts, bone and skin removed chickenNutrition
- 8 cups chicken brothNutrition
- 3/4 cup cilantro (diced)Nutrition
- 3 cloves garlicNutrition
- 1 cup chopped onionNutrition
- 1 cup chopped bell pepperNutrition
- 2 cans tomatoes & green chili'sNutrition
Directions
- 1Use the same pot for all ingredients.
- 2Dice and brown chicken in pan with olive oil.
- 3Take chicken out of pan and set aside.
- 4In same pan, put some of the olive oil, the onions, bell peppers and garlic. Stir until soft.
- 5Add cumin and chili powder, then add diced tomatoes and green chili's (do not drain juice).
- 6Add chicken broth and cilantro and bring to boil.
- 7Serve hot topped with shredded cheese. Tortilla chips can be added if desired.
