Boca Burger Taco
This vegetarian recipe makes a great alternative to a hamburger on a bun. The corn tortilla is much lower calorie than a bun, and the salsa gives it a fun kick.

- 1Spray a pan lightly with extra virgin olive oil, and brown one Boca burger over medium heat, turning occasionally, for 6 minutes.
- 2With your spatula, cut the Boca burger into two halves once it has cooked enough to separate easily.
- 3Cut a slice of cheese into two halves.
- 4With about one minute remaining, place a corn tortilla on the pan, just to soften and brown very slightly. Turn after 30 seconds, and place the cheese halves on the tortilla.
- 5Use the spatula to place the tortilla flat on a plate. Add shredded lettuce and salsa.
- 6Put the Boca burger on top, and fold the whole thing to eat it as a taco.
