Apple-Pecan Muffins

Ingredients
- 1/3 second spray butter cooking sprayNutrition
- 1/4 cup canola oilNutrition
- 2 large eggsNutrition
- 1 cup whole wheat flourNutrition
- 3/4 cup buttermilkNutrition
- 1 Golden Delicious appleNutrition
- 1/2 tsp cinnamonNutrition
- 1/2 tsp saltNutrition
- 1 tsp vanillaNutrition
- 1/4 cup chopped pecansNutrition
- 1 tsp baking sodaNutrition
- 1 cup brown sugarNutrition
- 1 cup all purpose flourNutrition
Directions
- 1Pre-heat oven to 400 °F (200 °C). Coat a 12 cup muffin pan with spray.
- 2In a small bowl, mix 2 tablespoons of brown sugar with pecans and cinnamon. Set aside.
- 3In a medium bowl, whisk both flours, baking soda and salt.
- 4In a large bowl whisk remaining brown sugar and oil until combined. Add eggs one at a time, whisking to incorporate completely. Add vanilla.
- 5Stir into large bowl flour mixture, 1/2 at a time, alternating with buttermilk until just combined.
- 6Pour mixture into muffin pan, filling each 2/3 full. Top with pecan cinnamon mixture. Bake for 20 minutes or until toothpick comes out clean.
