Fluffy Almond Waffles

Light grainless waffles made with ground almonds, bananas, spices and honey.

  1. 1Mix yolk, mashed banana, milk, honey and oil.
  2. 2Sift in almond meal, baking powder and salt.
  3. 3Stir in spices.
  4. 4Beat whites until stiff, hard peaks form.
  5. 5Carefully fold in egg whites, mix to fully combine.
  6. 6Fold in sliced fruit if desired.
  7. 7Bake in a waffle iron. These waffles tend to be wet so bake them at a lower temperature for a longer amount of time.
  8. 8Note: while most grainless waffles are heavy this special technique makes these waffles light!
