Light grainless waffles made with ground almonds, bananas, spices and honey.

- 1Mix yolk, mashed banana, milk, honey and oil.
- 2Sift in almond meal, baking powder and salt.
- 3Stir in spices.
- 4Beat whites until stiff, hard peaks form.
- 5Carefully fold in egg whites, mix to fully combine.
- 6Fold in sliced fruit if desired.
- 7Bake in a waffle iron. These waffles tend to be wet so bake them at a lower temperature for a longer amount of time.
- 8Note: while most grainless waffles are heavy this special technique makes these waffles light!
