Really delicious traditional tabouli using fresh parsley.

Ingredients
- 1 tsp saltNutrition
- 1 tbsp light olive oilNutrition
- 1 medium cucumber, choppedNutrition
- 4 tbsps chopped onion, finely mincedNutrition
- 2 cups parsley, finely choppedNutrition
- 3 tbsps lemon juiceNutrition
- 2 medium whole tomatoesNutrition
- 3 cups boiling waterNutrition
- 1/4 cup fine grained bulgur wheatNutrition
Directions
- 1Pour bulgur into a large heat-resistant bowl. Pour boiling water over and mix to moisten thoroughly. Soak for 45 minutes.
- 2Core tomatoes and dice.
- 3Put diced tomatoes in bowl and set aside for 45 minutes.
- 4Line strainer or fine sieve with several layers of paper towels.
- 5When bulgur has finished soaking, transfer to the prepared sieve and press to drain well. Return to the bowl.
- 6Drain diced tomatoes. Add drained tomatoes, onion, cucumber, parsley, lemon juice, salt, oil to bulgur, and mix well.
- 7Taste and adjust seasonings to your liking.
