  1. 1Pour bulgur into a large heat-resistant bowl. Pour boiling water over and mix to moisten thoroughly. Soak for 45 minutes.
  2. 2Core tomatoes and dice.
  3. 3Put diced tomatoes in bowl and set aside for 45 minutes.
  4. 4Line strainer or fine sieve with several layers of paper towels.
  5. 5When bulgur has finished soaking, transfer to the prepared sieve and press to drain well. Return to the bowl.
  6. 6Drain diced tomatoes. Add drained tomatoes, onion, cucumber, parsley, lemon juice, salt, oil to bulgur, and mix well.
  7. 7Taste and adjust seasonings to your liking.
