Huevos Rancheros (No Tortilla)
This is a great diet version of this yummy Mexican breakfast.

- 1Separate yolks from egg whites.
- 2Fry egg whites in a small sauce pan using pan spray on medium heat.
- 3Once the top of the egg begins to firm, flip over and fry the other side about 3 minutes.
- 4Once egg is cooked and slightly golden on both sides remove to a plate.
- 5Place black beans in same pan and heat.
- 6Place beans on egg tortilla.
- 7Place salsa on top of beans and top with fresh avocado or guacamole.
- 8Note: avocado is substituted for oil which brings down the calories.
