Foil Wrapped Vegetables

Ingredients
- 2 tbsps parmesan cheese, gratedNutrition
- 1/4 cup zesty italian salad dressing, reduced fatNutrition
- 1 cup whole button mushroomsNutrition
- 1 cup chopped green or yellow pepper chunksNutrition
- 1 cup chopped zucchini chunksNutrition
- 1 cup cherry cherry tomatoesNutrition
- 1 cup chopped red pepper chunksNutrition
Directions
- 1Preheat grill to medium-high heat. Toss vegetables and tomatoes with Italian dressing.
- 2Place in center of 18" long piece of heavy duty foil (or use a double layer of regular foil). Bring up the sides. Double fold top and ends to seal packet, leaving room for heat circulation inside.
- 3Grill for 8 to 10 minutes or until vegetables are crisp-tender, turning after 4 minutes.
- 4Cut slits in foil to release steam. Open packet, sprinkle vegetables with parmesan cheese.
