Thai Beef Salad with Peanuts

  1. 1Trim excess fat from beef. Cut into thin strips and place in a medium bowl.
  2. 2Add lime juice, soy sauce, water, ginger, and garlic. Toss to mix.
  3. 3Add green onions, cucumber, and bell pepper. Toss again. Cover and refrigerate at least 1-2 hours, or until time to serve.
  4. 4Place lettuce in a salad bowl. Pour beef, vegetables, and any remaining liquid over the lettuce.
  5. 5Toss together just before serving, then sprinkle peanuts over the top.
