  1. 1Bring water to a boil in a large pot.
  2. 2Add bouillon cubes to boiling water.
  3. 3In a separate skillet, add olive oil and sauté the onion, green pepper, garlic, and celery until tender.
  4. 4Add the sauteed vegetables, okra, and tomato to the pot.
  5. 5Add salt, pepper sauce, thyme, red pepper, and bay leaf.
  6. 6Let cook for at least 30 minutes.
  7. 7Add catfish and simmer for another 15 - 20 minutes.
  8. 8Serve and enjoy!
