- 1Preheat oven to 300° F (150° C). Coat non-stick baking sheet with non-stick cooking spray.
- 2In a large bowl add: 4 drops green food coloring, egg whites, vanilla and mint extracts. Beat with an electric mixer until soft peaks form.
- 3Gradually beat in the sugar until stiff peaks form.
- 4Fold in the chocolate chips.
- 5Drop by tablespoonfuls onto the baking sheet.
- 6Bake for 10 minutes. Turn off oven but leave the cookies in the oven until cool.
