Deviled Eggs

- 1Place eggs in enough cold water to cover completely and bring to a rolling boil over high heat. Reduce heat to a lower medium boil and cook an additional 12 minutes.
- 2Promptly chill eggs in ice water so yolks stay bright yellow, keep adding ice as necessary. Rapid chilling helps prevent a greenish ring to appear around the yolk.
- 3Remove shells from eggs, and halve lengthwise with a knife.
- 4Carefully remove the yolks, and place in a medium bowl.
- 5Mash yolks with a fork, and add remaining ingredients.
- 6Very carefully spoon mixture back into the egg white halves. Garnish with a light sprinkling of paprika (optional). Enjoy.
