Directions

  1. 1Place 1 cup of dry beans in large pot and add 6 cups of water.
  2. 2Dice onion and add to the pot. Put over medium heat for 3 hours.
  3. 3When beans are near done, dice Canadian bacon, garlic and sauté in olive oil in a large skillet.
  4. 4Once garlic and bacon start to brown, add remaining ingredients and stir fry until tomatoes start to break down.
  5. 5Add ingredients from skillet to bean pot.
  6. 6Cook together for at least another 30 minutes or until beans are entirely cooked.
