- 1Bring salted water to a boil. Add potato and onions to water.
- 2Using an immersion blender, puree the boiled potatoes and onions (remove some water if a thicker broth is desired, or for a thinner broth add more water).
- 3Add kale leaves into soup.
- 4Saute chorizo in olive oil. When lightly browned, add the chorizo and the drippings into the soup.
- 5Serve hot.
