  1. 1Pre-heat oven to 350° F (175° C).
  2. 2Spray a 9 x 13" cake pan with cooking spray.
  3. 3Mix all dry ingredients together
  4. 4In a separate bowl, beat egg whites until frothy and add the remaining ingredients to the eggs except for the 1 cup hot water.
  5. 5Add the egg mixture to the dry ingredients and mix just until moistened.
  6. 6Slowly stir in hot water. Do not over mix.
  7. 7Bake for about 20-25 minutes or until toothpick comes out clean.
  8. 8Let cool then cut into 15 pieces.
