Ingredients
- 1 1/2 bell peppersNutrition
- 1/2 cup milkNutrition
- 6 jumbo eggsNutrition
- 2 tbsps butterNutrition
- 1 tsp paprikaNutrition
- 1 tbsp parsleyNutrition
- 1 tsp black pepperNutrition
- 1 tsp sea saltNutrition
- 2 tbsps olive oilNutrition
- 6 slices cooked baconNutrition
- 1 tsp garlicNutrition
- 15 pieces crimini mushroomsNutrition
- 1/2 cup chopped onionsNutrition
- 1 large red potatoNutrition
Directions
- 1Put olive oil and butter in skillet with potatoes, garlic, paprika, parsley, salt and pepper.
- 2Cook until al dente, remove from pan, put chopped onions, peppers and mushrooms in skillet and cook until slightly tender.
- 3Beat eggs in bowl with milk, add cooked potatoes and vegetables.
- 4Put into oven safe casserole pan or baking pan, add cheese evenly spread over frittata.
- 5Cook for about 30-40 minutes or until golden brown and a toothpick comes out clean.
- 6Let sit for about 5 minutes before eating.
- 7Note: we eat this with garlic bread but can be served with fruit or as a sandwich for breakfast, brunch, lunch or dinner!
