Midwestern Macaroni Salad

Ingredients
- 2 oz fat free sour creamNutrition
- 1 tsp onion powderNutrition
- 1 tsp paprikaNutrition
- 1 tsp black pepperNutrition
- 1/4 cup chopped carrotsNutrition
- 1 stalk medium celery, choppedNutrition
- 2 medium scallionsNutrition
- 1/4 cup frozen peasNutrition
- 1 small red pepper, choppedNutrition
- 2 cups elbow shaped whole wheat elbow macaroniNutrition
- 1/2 cup fat free mayonnaiseNutrition
- 4 oz fat free cheddar cheese, gratedNutrition
- 1/4 cup chopped or diced dill picklesNutrition
Directions
- 1Cook elbows per package directions, drain and rinse under cold water - set aside. Defrost peas under cool water.
- 2Chop, celery, carrots, scallions, red pepper and pickles - add to large bowl.
- 3Mix mayonnaise, sour cream, onion powder, paprika and ground black pepper. Add salt lightly to taste.
- 4Add elbows and peas to vegetable mixture. Stir in mayonnaise and spice mixture and add shredded cheese.
- 5Stir to combine.
