- 1Break cauliflower into large pieces. In a shallow microwave safe dish, place cauliflower in a single layer.
- 2Add 2 tablespoons of water. Cover with plastic wrap and cook on high in microwave for 4 minutes.
- 3While cauliflower is cooking, mix no carb mayonnaise, mustard, chopped red onion, and cheese in a small bowl.
- 4Uncover bowl carefully and drain water. Sprinkle cauliflower with vinegar.
- 5Smooth cheese mixture on top of cauliflower and cook uncovered for an additional 3 minutes or until tender.
