  1. 1Using a cheese grater, grate 1/4 of a red onion and pan fry on medium heat using cooking spray. Once brown and translucent remove to a plate.
  2. 2Place 4 egg whites in the same pan and fry into a circle. Flip once the top has almost set.
  3. 3Once the egg has been flipped place hummus, avocado, salsa and the fried red onions on to half the egg.
  4. 4Fold the other half over the stuffing and cook a few more minutes until egg has firmed. Flip if necessary. Remove to a plate and sprinkle with just a tad of non-fat cheese.
