Tiger Prawn Bruschetta

- 1Quarter and remove seeds from tomatoes, then dice.
- 2Mix tomatoes, garlic, salt, pepper, basil and olive oil together.
- 3Divide mixed greens evenly into the center of 4 serving plates. Cut the sushi wrap into strips and place around the mixed greens on each plate. Place one lemon slice onto the bed of mixed greens.
- 4On medium heat saute your tomato mixture with prawns for 3 minutes. Add white wine and saute for 2 minutes more.
- 5Remove from heat and divide the prawns, 4 to each plate. Then spoon the tomato mixture evenly over the prawns. Serve warm.
