Holiday Creamed Spinach
Even people who don't like spinach will like this recipe.

- 1In a saucepan over medium heat melt butter. Sauté garlic until it starts to get a little bit golden. Stir in cream and nutmeg.
- 2Add spinach (do not drain spinach). Cook on medium heat about 5-8 minutes until spinach becomes tender.
- 3Stir in both cheeses, turn down heat to medium-low and continue stirring while cooking another 2-5 minutes making sure ricotta is well melted.
- 4Remove from heat, add salt and pepper to taste. Serve warm.
- 5This recipe can be made up to 2 days ahead and tastes great even reheated.
- 6Note: for low fat diets, use fat free half and half and only 1 tsp butter as substitutions.
