  1. 1Heat the oil and butter in a large skillet over medium-high heat.
  2. 2Season halibut pieces with salt and pepper and dredge in flour.
  3. 3Fry the halibut until golden brown on both sides and fish flakes easily, about 6-7 minutes total.
  4. 4Remove from pan and transfer to dinner plates keeping warm.
  5. 5Return pan to heat; pour wine into the hot empty skillet and use a spatula to scrape any browned bits from the bottom.
  6. 6Let the wine reduce by half then stir in the garlic and capers.
  7. 7Let sauce simmer for a minute to blend flavors and then pour sauce over fish and serve.
