Mapo Tofu (Mabo Dofu)

Ingredients
- 2 tsp sriracha hot chili sauceNutrition
- 1 tsp sesame oilNutrition
- 1/2 lb ground turkeyNutrition
- 1 tbsp oyster sauceNutrition
- 2 cloves garlicNutrition
- 1/2 oz gingerNutrition
- 2 medium scallionsNutrition
- 1/4 cup waterNutrition
- 1 fl oz mirinNutrition
- 1/2 oz dark misoNutrition
- 14 oz silken tofuNutrition
- 1 tbsp corn starchNutrition
Directions
- 1Mix dark miso, mirin, oyster sauce, sesame oil, corn starch, water and sriracha in a bowl to make the sauce. (Adjust seasonings as you see fit.)
- 2Put a splash of oil in a hot saute pan and fry the garlic and ginger until fragrant.
- 3Add the ground meat and break it up with a wooden spoon.
- 4When the meat is cooked, drain off any excess oil and add the sauce mixture.
- 5Stir to combine, then add the tofu. If the sauce seems thick (or non-existent), add some water and cook until the tofu is heated through.
- 6Note: if you’re using silken tofu, be careful not to mash up the tofu too much.
