Catalan Beef Stew

Ingredients
- 1/2 leekNutrition
- 2 cups cooked, diced beefNutrition
- 2/3 cup beef stockNutrition
- 1/2 medium carrot, choppedNutrition
- 1 g cinnamon, pinchNutrition
- 2 tbsp olive oilNutrition
- 1/2 stalk large celeryNutrition
- 2 cloves garlicNutrition
- 1 medium onion, choppedNutrition
- 1 large whole tomato, choppedNutrition
- 5 fl oz red wineNutrition
- 2 tbsps unsweetened cocoaNutrition
- 1 g flour (1/2 tbsp)Nutrition
Directions
- 1Chop garlic, onion, tomato, carrot, celery and leek.
- 2Heat olive oil in pot, add meat and brown for 3-4 minutes.
- 3Add the flour and stir. Add the wine and stir. Cook for 1 minute.
- 4Add the garlic, onion, tomato, carrot, celery and leek to the pot, stir.
- 5Add the cocoa powder. Add beef stock, stir and bring to a boil.
- 6Partially cover and lower to simmer.
- 7Allow to simmer for one hour to an hour and a half until the meat is tender.
- 8Salt and pepper to taste.
