Beefy Cornbread Casserole

Ingredients
- 1 tsp original seasoning blendNutrition
- 2 tbsps light butter with canola oilNutrition
- 5 oz yellow cornbread mixNutrition
- 15 oz whole kernel sweet cornNutrition
- 10.75 oz tomato soupNutrition
- 1 large eggNutrition
- 1 lb 93/7 lean ground beefNutrition
- 4 oz part skim shredded mozzarella cheeseNutrition
- 1/3 cup 1% milkNutrition
- 1 tbsp chili powderNutrition
- 1 medium onion, choppedNutrition
- 1/2 cup waterNutrition
Directions
- 1Preheat oven to 350 °F (175 °C). Spray a 13"x9" baking dish with cooking spray.
- 2Meanwhile heat a large skillet to medium heat. Add onions and saute until the onions are soft. Add ground beef and cook until no longer pink.
- 3Stir in soup, corn, chili powder, seasoning blend, and water. Pour into baking dish.
- 4In a separate bowl, mix cornbread mix, egg, butter, and milk together. Spread the batter evenly over the top of the meat mixture.
- 5Bake 20-25 minutes until cornbread is baked. Sprinkle cheese on top and broil 3-5 minutes until cheese is melted.
