  1. 1Cut pods into half lengthwise and remove inner core with seeds. Discard the core and seeds.
  2. 2Cut into pieces and soak in water for 30 minutes. Drain and wash thoroughly.
  3. 3In a pan with oil, put coriander seeds, diced onions, and garlic. Sauté until translucent.
  4. 4Add bitter gourd, salt, turmeric, and chili powder. Cook on medium heat with lid on for 10 minutes.
  5. 5Pour water, close lid, and cook for 5 minutes or until done.
