Babanatza with Bananas

Ingredients
- 1 1/2 tbsps butterNutrition
- 3/4 cup chopped pecansNutrition
- 12 large eggsNutrition
- 1/2 cup sugarNutrition
- 5 Granny Smith applesNutrition
- 14 matzosNutrition
- 2 tsps cinnamonNutrition
- 2 large bananasNutrition
- 1/2 cup packed raisinsNutrition
- 1 cup waterNutrition
- 1/2 cup olive oilNutrition
- 1/4 cup sliced almondsNutrition
- 1/2 cup honeyNutrition
Directions
- 1Break matzos into bite sized pieces in large mixing bowl. Boil water and pour over matzos pieces.
- 2In another medium mixing bowl beat eggs and raisins. Add raisins and eggs to matzos.
- 3Peel, core & dice apples. Mix apples, nuts, oil, honey and sugar in bowl previously used for mixing eggs and raisins.
- 4Add mixed ingredients into matzo egg mixture and mix.
- 5Grease 2 deep 2 quart baking dishes. Pour mixture into dishes.
- 6Sprinkle with cinnamon and butter.
- 7Bake at 350 °F (175 °C) for 1 hour.
- 8Serve warm or cold.
