Wisconsin Cheese Soup

Ingredients
- 2 cups shredded cheddar cheeseNutrition
- 2 cups fluid heavy creamNutrition
- 1/4 tsp black pepperNutrition
- 1/2 tsp saltNutrition
- 1 cup chicken brothNutrition
- 1/4 cup butterNutrition
- 2 stalks small celery, choppedNutrition
- 1 medium onion, choppedNutrition
- 1 medium green bell pepperNutrition
- 1 medium red bell pepperNutrition
Directions
- 1In a small saucepan over medium-high heat, combine celery, bell pepper and chicken broth. Bring to a boil. Cover, reduce heat and simmer for five minutes. Remove from heat and set aside.
- 2In a large saucepan, cook onion in butter over medium heat until onion is translucent. Stir in pepper, salt and cream.
- 3Bring to a boil, then stir in cheese until melted.
- 4Stir in reserved vegetables and cooking liquid.
- 5Heat through and serve.
- 6Note: if thicker consistency is desired, add one or two egg yolks and simmer an additional 10-20 minutes.
